Why Organic Eggs Cost the Planet More

The research, published in Royal Society Open Science and led by scientists connected to the University of Oxford, modelled what would happen if an entire national egg supply shifted to organic, free-range production. The result was striking. A full switch would push emissions to roughly 2.3 million tonnes of CO2 equivalent a year, compared with about 1.18 million tonnes under a fully caged system. One kilogram of organic eggs generates close to 3.5 kilograms of CO2 equivalent, nearly double the figure for caged eggs.

The reason is simple biology. Caged hens convert feed into eggs more efficiently because they move less and are sheltered from weather and predators. Free-range and organic birds burn more energy roaming outdoors, so farms need more hens, more land and more feed to match the same output. Mortality is also higher outdoors, near 8 percent in organic flocks against roughly 2.5 percent in caged systems, meaning even more birds are needed to keep supply steady. Poultry economists say this efficiency gap shows up wherever farms scale up organic or free-range production, from Europe to South Asia to sub-Saharan Africa.

A Dilemma for Buyers Around the World

This does not make cages the moral answer. Scientists behind the study stress that welfare, biodiversity, pesticide use and soil health still matter, and caged systems score poorly there. It means shoppers, from a market stall in Manila to a supermarket aisle in London, Lagos or Toronto, cannot rely on a single climate impact label for the full picture. Egg consumption is rising fastest across Asia and Africa, where poultry is often the cheapest animal protein, making this trade-off a global concern, not a niche debate for wealthy countries.

A Simple Checklist for Conscious Egg Buyers

  • Look beyond the “organic” or “free-range” sticker; check if the brand publishes carbon or welfare data.
  • Buy local where possible, since transport emissions add up regardless of farming method.
  • Reduce food waste at home; wasted eggs waste every input used to produce them.
  • Support brands that report on both welfare and emissions, not just one.
  • Treat eggs as one part of a balanced plate, not a single choice that offsets your whole diet’s footprint.
